Reddening Agents/Curing Aids

Reddening agents and curing aids have a positive effect on color formation resulting from the curing process and on color stability during storage. The color-producing myoglobin complex is relatively sensitive to oxidation. Therefore, it is important to exclude oxidative processes during color formation and storage as much as possible. Ascorbic acid and ascorbate are radical scavengers with an antioxidant effect and are ideally adapted to the specific production conditions, possibly combined with organic acids.
