Cooked sausages are made from pre-cooked raw materials. 
The production of cooked sausage preserves has been a popular way to make meat products shelf-stable over a long period of time. The seasonings are usually stronger.  
Herbs such as marjoram and thyme are used in numerous varieties such as liver sausage and red sausage. Fine and coarse liver sausage varieties impress with their variety of flavors and creamy spreadability. Pâtés and aspic products also belong to the range of cooked sausages.
